Lovely Handwritten Notes has a delightful run-down of some of the world's most interesting post offices. My favorite in the list was the La Grande Poste d’Alger, the main post office of Algeria. OOh, I've been to two out of ten (Ho Chi Minh City, Vietnam and Hideaway Island, Vanuatu) -- I'll add the others to my Travel Wish List!
I would also add:
Port Lockroy Post Office on Goudier Island in Antarctica -- penguins, ahoy!
The Ochopee Post Office in Florida -- supposedly the smallest post office in the United States, and cute as a button.
Though not strictly a post office, there is a post box on Mount Yasur in Vanuatu -- Mount Yasur is an active volcano!

Yes, Ho Chi Minh City is amazing, and I'm pretty sure I have some of those pics on my Flickr account from our 2013 trip :D
